Scalding is required to loosen feather follicles in advance of mechanical plucking. For certain processers, it may also be used to prepare for removal of the skin. Scalding is an important step to remove pollutants off birds and prevent bacterial cross-contamination.
Blow nozzles are installed at the bottom of the bath and fed by a nearby blower. The blower sucks warm air from the cabinet above the warm water bath. Air is then pumped into the bath through blow nozzles to create a closed loop air agitation process. Compressed air travels through the nozzles to ensure the product does not float up. Air agitation and up/down movements of birds cause turbulence, which benefits the contact and heat transfer of water to the birds’ skin.
