The Leg processor high yield separates both legs from the lower back. The anatomical leg has a high yield of meat and skin, with minimal bone fragments, and requires no further rework.
The controlled removal process for the back-piece results in a maximized leg yield, retaining an unrivaled percentage of anatomical joints. The two anatomical legs remain in the shackle while the lower back is dropped, resulting in an excellent product for further processing, for example deboning.
