Unlike conventional air chilling, spray chilling combines controlled airflow with intermittent cold water spraying to enhance moisture retention and accelerate the chilling process. It is ideal for processing both frozen and fresh poultry products, offering flexibility in poultry processing operations.

Overview

The system consists of an air cooling tunnel with strategically placed air coolers above the poultry. Cold air is directed downwards while water sprayers intermittently apply chilled water to the surface of the birds. This process prevents the skin from drying out and helps maintain product appearance. It is particularly effective in reducing the risk of discoloration, especially in hard scalded birds.
